This has to be one of my favorite pizza recipes. If you like bologna like I do, you will love this incredible meal. It is easy to prepare and the whole family can get involved.
|5||slices Schneiders (Country Naturals) bologna|
|1/2 cup||garlic and basil pizza sauce|
|1||1 artisan pizza crust, approx 8 x12 inches|
|1/4 cup||thinly sliced shallots|
|1/2 cup||sliced cremini mushrooms|
|1/2 cup||red peppers, sm diced|
|1 1/2 cups||shredded mozzarella cheese|
Pre-heat oven 400°F. Using 1 inch cookie cutter; cut out circles in each bologna slice (approx 7 per slice).
Spread pizza sauce evenly over crust, leaving a ¼ inch border. Top sauce with shallots, mushrooms, red peppers, bologna and sprinkle with mozzarella cheese. Bake for approx 15-20 minutes or until cheese melts. Cut in 4 pieces.
I used Schneiders Bologna “Country Naturals” that is made from pork raised without antibiotics which is excellent and totally delicious. There are no preservatives added, no artificial ingredients, color or flavors, no additives, no MSG or by products and wonderfully gluten free.
This new development has brought new heights to a sausage that we have been waiting for a long time. Now the whole family can enjoy this exceptional product.
