Cheesy Pig in Sooieet! Potato Biscuit Blanket

A twist on the traditional pig in a blanket by wrapping the weiner with cheese in a sweet potato biscuit for a delightful flavour combination

Ingredients

2 Pkg Maple Leaf® Top Dogs® Original Wieners
1 cup favourite cheese, grated
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
8 tbsp (1 stick) cold, unsalted butter
2/3 cup buttermilk
1 cup (1 medium potato) orange-fleshed sweet potato, cooked, mashed

Directions

BOIL hot dogs until almost done. Set aside.

SIFT flour, baking powder, baking soda, and salt together in a large bowl.
CUT butter into flour mixture until it resembles a coarse cornmeal.
BLEND buttermilk and sweet potato in a separate bowl.
POUR into flour mixture and mix until just combined.

KNEAD dough on a lightly floured surface, with floured hands and dusting with flour as necessary, until it just comes together.
ROLL out dough with a lightly floured rolling pin to about a 1/4 inch thick.

CUT OUT sections of desired size and shape from the dough to wrap around hot dogs.
SPRINKLE cheese over each section then wrap around a hot dog.
BAKE at 375 degrees Farenheit for about 18 minutes or until biscuit is lightly browned and cheese melted.

OPTIONAL: Serve with desired condiments (I ate mine with a yummy kale-almond pesto). Bon appehtite!
