A crowd pleaser and easy to prepare. These quesadillas are packed with seasoned chicken and topped with a creamy avocado salsa.


1 Package Maple Leaf Prime Naturally® Thin Slice Chicken Breast
1 tsp (5 mL) Cumin
.5 tsp (2 mL) Chili Powder
Salt and pepper
1 tbsp (15 mL) Olive oil
4 Dempster’s® Original Large Tortillas (10 inch/25 cm)
2 cups (500 mL) Grated Monterey Jack or Tex Mex cheese
4 Green onions, sliced
2 Ripe avocados, diced
1 Tomato, diced
1 Small red onion, finely diced
2 Jalapeno peppers, finely diced
2 tbsp (30 mL) Lemon juice
Salt and pepper


PREHEAT oven to 375°F (190°C). Lightly coat 2 large baking sheets with non-stick cooking spray or line with parchment paper.

HEAT oil in a large skillet over medium-high. Season chicken on both sides with a mixture of cumin, chili powder, salt and pepper. Sauté chicken for 5-6 minutes per side or until browned. Remove from pan and slice into thin strips. Set aside.

PLACE tortillas on baking sheets. On one half of each tortilla layer ½ of the cheese, green onions, chicken and remaining cheese. Fold tortillas over filling to make a half moon shape. Bake in preheated oven for 7 minutes, turn quesadillas over and continue to bake another 3-4 minutes or until cheese is melted.

COMBINE all ingredients by tossing gently.

CUT quesadillas in halves or quarters and top with salsa before serving.
