Quick and easy chicken and broccoli wraps made healthy with a little quinoa. Perfect for a weeknight meal.
|1||Head of broccoli, chopped|
|1/4 cup||Sundried tomatoes, chopped|
|3||Cloves of garlic, minced|
|1 cup||Quinoa, measured and then cooked|
|2 tsp||Olive oil|
|1 1/2 cups||Milk|
|1 cup||Cheddar cheese, grated|
1. Start by frying your chicken breasts. Just season with salt and fry in olive oil until fully cooked. Then let rest and chop into bite sized pieces.
2. While your chicken is cooking, make your cheese sauce. Melt the butter in a pot and then whisk in the flour. Gradually pour in the milk and whisk until thickened. Stir in the cheese and season to taste.
3. Next, sauté your onion, garlic, and broccoli until soft and flavourful. Season to taste.
4. Finally stir together the chicken, veggies, cheese sauce, quinoa, and sundried tomatoes. Divide mixture among tortillas, wrap up, and enjoy!
