A crisp fresh baguette stuffed with thinly sliced roast beef, cheddar cheese, sautéed mushrooms, peppers and onions then baked until the cheese is oozing.
|2 tbsp||(30 mL) Olive oil|
|1/2||Onion, thinly sliced|
|2 cups||(500 mL) Sliced mushrooms|
|1||Red Pepper, sliced|
|2||Dempster’s® Ovenfresh™ Baguettes, baked and cooled slightly|
|2 tbsp||(30 mL) Dijon mustard|
|2||(175 g) Packages Maple Leaf® Deli Fresh Shaved Roast Beef|
|1 cup||(250 mL) Grated Cheddar cheese|
PREHEAT oven to 350˚F (180˚C).
HEAT oil in a large skillet over medium high. Add onions, mushrooms and peppers. Sauté 5-7 minutes or until nicely browned. Set aside.
SPLIT each baguette in half lengthwise. Spread bottom halves with Dijon mustard. Add roast beef, mushroom mixture and grated cheese. Top with baguette tops and wrap loosely in tin foil.
Bake in preheated oven for 10 minutes or until cheese has melted. Cut each sandwich in half and serve warm.
