2 English muffins
2 eggs
2 slices of cheddar cheese
4 tbsp mayonnaise
1 tsp butter


Lightly toast the muffins. Spread 1 tbsp. of mayonnaise on each half of muffin. Whisk eggs. Heat butter in a small frying pan until hot. Pour the egg mixture into pan and turn down heat to medium hot. Cook until egg is done for about 2 minutes. Cut omelette in half. Fold the two halves over. Place one slice of cheese on one muffin, and place omelette on the other half. Place one half over to form a sandwich. Repeat for the other sandwich.
