Gooey, melted cheese in the middle of these, Cajun spiced meatballs. Tangy BBQ sauce and creamy ranch dressing make them perfect.
|1||(454 g) Maple Leaf Prime Naturally® Ground Chicken|
|1/2||Medium onion, finely diced|
|5 tbsp||75 mL) Ranch salad dressing, divided|
|2 tbsp||(30 mL) Cajun spice|
|Salt and pepper|
|20 - 22||¼” (1 cm) cubes Cheddar cheese|
|1 - 1 1/2 cups||(250-375 mL) BBQ sauce|
|2 - 3 tbsp||(30-45 mL) Grated Cheddar cheese|
|1 tbsp||(15 mL) Chopped green onion|
COMBINE chicken, onion, 2 tbsp (30 mL) ranch dressing, Cajun spice, salt and pepper. Mix gently using your hands. Form the mixture into 20-22 meatballs. Insert a cube of Cheddar cheese into the centre of each meatball.
HEAT a large non-stick skillet over medium-high. Lightly coat with non-stick cooking spray and cook meatballs for about 5 minutes browning on all side. Reduce heat and cook for another 8-10 minutes or until the internal temperature reaches 165°F (74°C).
POUR BBQ sauce over the meatballs and gently toss to coat. Drizzle with the remaining ranch dressing, sprinkle with grated cheese and chopped green onion. Serve over rice.
