Inspired by a photo posted by Chef Ted Reader this was a last minute addition to a dinner party and has been loved ever since. I mean really, combining gooey cheese and bacon...... how could I not make this!
|1 lb||Bacon - cut into 1 cm strips|
|4||Onions - diced|
|.5 cup||Brown Sugar|
|.5 cup||Maple Syrup|
|500 g||Brie Wheel|
|1||Cedar plank - soaked|
Start by cooking the bacon until crispy, then remove from the pan
Now cook the onions over low heat until they are golden brown (caramelized). Remove them from the pan.
Drain off any excess fat and add the bacon and onions back to the pan. Add the brown sugar and maple syrup and bring to a gentle simmer. Cook for about 15 minutes.
While the bacon jam is simmering place the brie on the cedar plank and place on a hot BBQ grill, close the lid.
After a few minutes the plank should be smoking and the brie soft when gently touched. If you cook it too long the brie will burst, which is not a complete loss, but some of the delicious cheese may be lost to the depths of your BBQ.
Top cheese with bacon jam and serve warm.
*note, the bottom of the plank will be charred (this is supposed to happen) so do not place it directly on your table or you will have a big mess to deal with (ask me how I know this!). Leave the cheese on the plank but use a platter or plate under the plank.
