|2 cups||(500 mL) Cauliflower florets|
|½ cup||(125 mL) Chicken broth|
|1/3 cup||(75 mL) Ready prepared croutons|
|1/3 cup||(75 mL) Shredded cheddar cheese|
In a medium-sized saucepan bring chicken broth to a boil. Add cauliflower, lower heat and cook for 3 to 5 minutes until tender-crisp. Drain well and place in a small oven proof baking dish. Place croutons in plastic bag and crush with rolling pin or heavy bottle. Add cheese to bag and toss to mix. Sprinkle over cauliflower. Broil for 3 to 4 minutes until cheese is melted and crumbs are toasted. Alternative serving suggestion: Replace cauliflower with broccoli.
