|1/2 lb||(225 g) Maple Leaf® Natural Selections® Bacon, chopped|
|2 cups||(500 mL) Cauliflower florets|
|5 oz||(150 g) Grated white Cheddar cheese|
|1 tsp||(5 mL) Cornstarch|
|1/4 tsp||(1 mL) Garlic powder|
|Pinch of cayenne|
|Salt and pepper|
COOK bacon over medium-high in a medium skillet for 8-10 minutes or until crisp. Remove from the pan using a slotted spoon and drain on a paper towel lined plate. Set aside.
BRING a medium pot of salted water to a boil. Add cauliflower and cook for 10 minutes or until tender. Drain, reserving ½ cup (125 mL) of the cooking liquid. Set aside.
PREHEAT broiler to high.
PUREE cauliflower with the reserved cooking liquid using a blender or hand-held blender. Stir in half of the cheese and the bacon bits. Add cornstarch, garlic powder, cayenne, salt and pepper. Stir to combine and transfer to an ovenproof baking dish. Sprinkle with the remaining cheese. Place under the broiler until hot and cheese is golden and bubbly.
SERVE with crudités, crostinis or tortilla chips.
