This colourful chicken stir-fry has a great crunch from the cashews and mixed vegetables. With just a toss of fresh ingredients, this stir-fry can be made in no time.


2 tbsp (30 mL) Vegetable oil
2 Maple Leaf Prime Naturally® Chicken Breasts, cut into thin strips
2 Cloves garlic, minced
1 tbsp (15 mL) Grated fresh ginger
1 Red pepper, sliced
1 cup (250 mL) Sliced mushrooms
1 Bok choy, cut into strips
6 Green onions, cut into 2-inch (5 cm) diagonal strips
1 cup (250 mL) Cashews
3 tbsp (50 mL) Soy sauce
1 tbsp (15 mL) Sesame oil


HEAT vegetable oil in a large skillet over medium-high heat. Add chicken, garlic and ginger and cook until golden brown, about 10-12 minutes. Remove from pan with a slotted spoon and set aside.

ADD peppers, mushrooms and bok choy to the same pan. Stir-fry for about 5 minutes. Add green onions, cashews, soy sauce, cooked chicken and sesame oil. Stir to combine and serve hot.


Serve over stir-fry noodles or rice
