This colourful chicken stir-fry has a great crunch from the cashews and mixed vegetables. With just a toss of fresh ingredients, this stir-fry can be made in no time.
|2 tbsp||(30 mL) Vegetable oil|
|2||Maple Leaf Prime Naturally® Chicken Breasts, cut into thin strips|
|2||Cloves garlic, minced|
|1 tbsp||(15 mL) Grated fresh ginger|
|1||Red pepper, sliced|
|1 cup||(250 mL) Sliced mushrooms|
|1||Bok choy, cut into strips|
|6||Green onions, cut into 2-inch (5 cm) diagonal strips|
|1 cup||(250 mL) Cashews|
|3 tbsp||(50 mL) Soy sauce|
|1 tbsp||(15 mL) Sesame oil|
HEAT vegetable oil in a large skillet over medium-high heat. Add chicken, garlic and ginger and cook until golden brown, about 10-12 minutes. Remove from pan with a slotted spoon and set aside.
ADD peppers, mushrooms and bok choy to the same pan. Stir-fry for about 5 minutes. Add green onions, cashews, soy sauce, cooked chicken and sesame oil. Stir to combine and serve hot.
Serve over stir-fry noodles or rice
