I love carrots and I love making souffles, so I combined them into one amazing side dish.


5 cups carrots
2 tsp lime juice
1/4 cup minced onion
1/4 cup butter
2 cup brown sugar
2 tbsp flour
1 tsp ground cinnamon
1/4 tsp nutmeg
1/2 tsp ginger
1 cup milk
3 L beaten eggs


Peel carrots, chop into 1 inch pieces, cook in boiling water for about 20 minutes. Drain and remove from heat. Put all remaining ingredients into a food processor, and beat until smooth. Pour into a greased soufflé dish or casserole dish. Bake uncovered at 350F about 40 - 45 minutes. Fantastic flavour, great winter side dish.


Great side dish in the winter. Doesn't taste like carrots at all!
