Very simple and delicious sandwich that makes the best healthy lunch option!

Ingredients

1 Pkg Maple Leaf® Natural Selections® Oven Roasted Chicken Strips, chopped
1/2 Carrot, grated
1/4 cup (60 mL) Raisins
3 tbsp (45 mL) Mayonnaise
1 tbsp (15 mL) Chopped fresh parsley (optional)
2 tbsp (10 mL) Lemon juice
Salt and pepper
Lettuce
4 Slices Dempster’s® Whole Wheat Bread

Directions

COMBINE chicken, carrot, raisins, mayonnaise, parsley, lemon juice and salt and pepper to taste. Place a leaf of lettuce on 2 slices of bread, spread each with a scoop of filling and top with the second slice of bread.
