Carrot cake for breakfast? Almost sounds too good to be true. Try out this recipe to taste for yourself!


1 Slice Dempster’s® WholeGrainsTM Canadian Century Grains Bread, lightly toasted
2 tbsp (30 mL) Cream cheese, softened
2 tsp (10 mL) Pure maple syrup, divided
.5 cup (125 mL) Finely grated carrot
2 tbsp (30 mL) Dried currants or raisins
1 tbsp (15 mL) Chopped toasted walnuts


MIX cream cheese with 1 tsp (5 mL) maple syrup until smooth. Spread over lightly toasted bread. Top with grated carrot, dried currants or raisins and chopped walnuts. Drizzle with remaining maple syrup before serving.


Toasting bread is optional.
