This traditional Carolina BBQ Pulled Chicken Sandwich is perfect summer meal your whole family will love!
|1||Package (8 pieces) Maple Leaf® Prime® Naturally Boneless Skinless Chicken Thighs|
|Salt and pepper|
|.25 cup||(60 mL) Ready prepared BBQ sauce|
|2 tsp||(10 mL) Yellow mustard|
|1.5 tbsp||(22 mL) Apple cider vinegar|
|1 tbsp||(15 mL) Brown sugar|
|4||Leaves iceberg lettuce|
|4||Dempster’s® Deluxe Ham Buns, lightly grilled|
PREHEAT grill to medium-high. Lightly coat with non-stick cooking spray. Season chicken with salt and pepper. Grill chicken for 6-8 minutes per side or until evenly char-grilled and the internal temperature reaches 165°F (74°C). Remove from grill and pull apart/shred with two forks.
HEAT in a small saucepan over low heat, BBQ sauce, mustard, cider vinegar and brown sugar. When sugar has dissolved, toss mixture with shredded chicken.
ASSEMBLE sandwiches by placing a leaf of lettuce on the bottom half of each bun; top with pulled chicken and top half of the bun.
