This traditional Carolina BBQ Pulled Chicken Sandwich is perfect summer meal your whole family will love!


1 Package (8 pieces) Maple Leaf® Prime® Naturally Boneless Skinless Chicken Thighs
Salt and pepper
.25 cup (60 mL) Ready prepared BBQ sauce
2 tsp (10 mL) Yellow mustard
1.5 tbsp (22 mL) Apple cider vinegar
1 tbsp (15 mL) Brown sugar
4 Leaves iceberg lettuce
4 Dempster’s® Deluxe Ham Buns, lightly grilled


PREHEAT grill to medium-high. Lightly coat with non-stick cooking spray. Season chicken with salt and pepper. Grill chicken for 6-8 minutes per side or until evenly char-grilled and the internal temperature reaches 165°F (74°C). Remove from grill and pull apart/shred with two forks.

HEAT in a small saucepan over low heat, BBQ sauce, mustard, cider vinegar and brown sugar. When sugar has dissolved, toss mixture with shredded chicken.

ASSEMBLE sandwiches by placing a leaf of lettuce on the bottom half of each bun; top with pulled chicken and top half of the bun.
