Sweet caramelized onions with aromatic thyme and smokey bacon and deglazed with Crown Royal.

A hot appetizer that can be made ahead and reheated when guests arrive.
|6||slices thick cut Maple Leaf Bacon|
|6||small onions, chopped finely|
|1 tbsp||fresh thyme|
|2 oz||Crown Royal Whiskey|
|1||small red pepper, diced|
In a medium skillet on high, cook the bacon, garlic, onions and thyme.
Stir regularly to distribute heat and juices will begin to escape after a few minutes. Lower the heat to low (2-4) to allow the bacon to crisp and the onions to caramelize. Continue cooking until the onions are dark 20min.
When the pan begins to splatter add the alcohol. Scrape the pan with a wooden spoon to lift all of the crispy brown bits; 5min.
Serve: on crusty bread or crackers
Turn off the heat and pack into a covered vessel.
This can be refrigerated and reheated when needed.
