About this Recipe

Grilled Ontario vegetables paired with prosciutto make this a hearty and delicious sandwich.


10 slices Maple Leaf® Canadian CraftTM Prosciutto
1 small eggplant, sliced
1 large red pepper
1 small red onion, sliced
4 slices buffalo mozzarella cheese
4 slices rustic style bread
4 fresh basil leaves


Preheat grill to medium high heat.

Roast eggplant, red pepper and onion for 4 to 5 minutes.

Remove skin from red pepper and slice into 1 inch strips.

Season vegetables with salt and pepper.

Assemble sandwiches by placing cheese on bottom slice of bread followed by 5 slices of prosciutto, eggplant, red pepper, red onion and basil.

Repeat with remaining ingredients.

Grill sandwiches 2 to 3 minutes per side.

Serve immediately.


Serve with a side salad of baby greens or pair with kettle chips.
