A family favourite recipe.
|2||Maple Leaf Prime Naturally Boneless Skinless Chicken Breasts|
|2 tbsp||Vegetable Oil|
|1/2 cup||Red Pepper, chopped|
|1/2 cup||Broccoli, chopped|
|1 can||Pineapple chucks, reserve half cup of juice|
|4 tsp||Corn Starch, mixed with 4 tsp water|
|3 tbsp||Brown Sugar|
|3 tbsp||Rice White Wine Vinegar|
|1/4 cup||Chicken Stock|
|1 tsp||Salt and Pepper|
In a large frying pan, heat oil over medium high heat. Season chicken breasts, cut into medium-sized pieces and add to pan. Brown chicken and remove to plate. Add red pepper and broccoli, cook for 1 minute.
Stir in pineapple chunks, juice, sugar, vinegar and chicken stock and bring to a simmer. Simmer until sauce begins to reduce. Stir in cornstarch mixture and bring liquid to a simmer. Stir in chicken pieces and cook for 5 minutes. Serve over rice.
