Build yourself this scrumptious sandwich that utilizes fresh salmon fillets, citrus flavours and a yummy avocado spread to top it all off.
|1 tsp||(5 mL) Lemon zest|
|1 tbsp||(15 mL) Lemon juice|
|1 tbsp||(15 mL) Orange zest|
|.25 cup||(60 mL) Light mayonnaise|
|Salt and pepper|
|4||(150 g) Salmon fillets|
|2 tsp||(10 mL) Cajun spice|
|2 tbsp||(30 mL) Olive oil|
|1 cup||(250 mL) Shredded iceberg lettuce|
|8||Slices Villaggio® 100% Whole Wheat Thick Sliced Italian Style Bread, toasted|
|2||Small thinly sliced shallots|
MASH the avocado with the lemon zest and juice, orange zest, mayonnaise, salt and pepper. Cover with plastic wrap and refrigerate.
PREHEAT BBQ or grill pan to medium-high heat. Rub salmon fillets with olive oil and Cajun spice. Place on grill or grill pan and cook for 3-4 minutes per side or until fish flakes easily with a fork and is just barely pink in the center. Remove from heat and squeeze the juice of the orange over top. Set aside. Meanwhile, spread each slice of toast with citrus avocado spread, top four with lettuce, sliced tomatoes, shallots and a fillet of salmon. Top with a second slice of toasted bread and serve.
