That's a wrap! Send the kids to school with a healthy low fat wrap that is full of textures and colours that delight the senses and taste buds.
This Beef Burrito has all the Mexican flavours without the heat, perfect for lunch time. They won't want to share this one!

Not just nutritional but this meal uses repurposed brown rice!

Ingredients

1 7 inch Tortilla wrap any flavour
3 tbsp cooked rice, I used brown for fiber
3 -4 matchstick pieces of cheddar cheese
3 each matchstick pieces of red pepper, cucumber, romaine lettuce
1 slice, cut into matchstick pieces of Schneiders, Shaved Roast Beef
2 tbsp mayonnaise
1 tbsp each of onion, EVOO and black beans
5 snap peas, strings removed and rinsed
1 serving of yogourt, your fave
1 tbsp granola, nut free
1 oatmeal raisin cookie
1 low sugar juice or water
1 pinch of salt

Directions

In a small preheated skillet sauté the onion and beans with the oil for 1-2 min on med. high heat. Add the salt, stir to cook.
Cool while preparing the following.

Spread the wrap with mayonnaise. Begin to layer the meat, vegetables, cheese and salad. Top with the refried bean mixture. Fold in sides and wrap tightly. Cut through the middle on a diagonal for easy eating.

Place drink, yogourt, granola, peas and cookie in reusable food safe portable containers.
