Spice up you morning with this quick and easy breakfast taco using fully cooked sausage, scrambled eggs and creamy avocado.

Ingredients

1 tbsp (15 mL) Butter
1 (300 g) Package Maple Leaf® Fully Cooked Sausages, coarsely chopped
.5 Green pepper, diced
1 Jalapeno, seeded, minced
.5 Small onion, finely chopped
8 Eggs
3 tbsp (45 mL) Milk
8 Small Tortillas
1 Avocado, sliced
1 cup (250 mL) Grated Cheddar cheese
1 cup (250 mL) Prepared salsa

Directions

HEAT butter in a large skillet over medium heat. Add sausage, peppers and onions. Cook 3-4 minutes or until soft.

WHISK together eggs and milk. Add to the pan and cook, stirring occasionally, until eggs have scrambled and are just set. Season with salt and pepper. Remove from heat.

DIVIDE sausage and egg mixture between tortillas and top with avocado slices and grated cheese. Serve with salsa on the side.
