Ingredients

2 tbsp (30 mL) Butter
1 tbsp (15 mL) Dice red peppers (optional)
3 Eggs, lightly beaten
1 tbsp (15 mL) Milk
2 tbsp (30 mL) Maple Leaf® Ready Crisp® Fully Cooked Real Bacon Pieces
3 tbsp (45 mL) Grated Cheddar cheese
2 Small tortillas
1/4 cup (60 mL) Salsa
1 Sliced avocado

Directions

HEAT butter in a small non-stick skillet until melted. Add peppers and cook for 1-2 minutes. Mix eggs with milk and add to peppers in the skillet. Cook stirring for 2-3 minutes or until eggs are scrambled and just set. Fold in bacon pieces and cheese.

PLACE tortillas on a microwavable plate and cover with a damp paper towel. Heat on high for 30 seconds or until warmed through. Top each tortilla with egg mixture; garnish with salsa and avocado slices. Fold in half and serve.

Notes

Serve sour cream on the side if desired.
