About this Recipe

Change up a great breakfast sandwich by adding kimchi and tomatoes to a bacon and eggs ciabatta for a movie night dinner.

It's delicious, easy and quick to prepare and is nutritious and satisfying.

1 fresh ciabatta bun
1 fresh egg (or 2 if you wish)
3 slices of Maple Leaf® Bacon
.3 cup kimchi
2 cherry tomatos (halved)

Fry the bacon in a large frying pan on high until done but not crisp.

Remove the bacon and set aside in a warm spot or in the oven at a warm temperature.

In the same pan, break the egg and fry it in the bacon fat. Cover the pan with a lid to cook the top of the egg at the same time. Remove the egg and place it with the bacon, ready to assemble into the sandwich.

Heat the chiabatta bun in oven, then slice lengthwise to make a top and a bottom.

Place the kimchi evenly across the whole bottom of the bread. Place the tomato halves on top of the kimchi.

Place the fried egg on the kimchi and tomatoes and then place the bacon on top of the egg.

Put the top on the bun and cut the sandwich into halves or quarters - and serve.

Your breakfast for dinner spicy sandwich recipe equals one serving. Multiply the ingredients by the number of hungry movie-goers.

In case you cannot find kimchi, you can marinate some raw cabbage coleslaw in one tablespoon of Frank's Original Red Hot Sauce for half an hour or more.
If using coleslaw instead, consider adding some sliced red onion to your sandwich too.
