Try out something different with this Brazilian Style Chicken dish- a true delight to the senses!
|1||Maple Leaf Prime Naturally® Whole Chicken|
|2||Cloves garlic, minced|
|Salt and pepper|
|2 tbsp||(30 mL) Vegetable oil, divided|
|1||Large tomato, chopped|
|2 tbsp||(30 mL) Chopped green pepper|
|3||Potatoes, peeled and cut into 1-2” (2.5-5 cm) pieces|
|2||to 3, Carrots, peeled and cut into 1-2” (2.5-5 cm) pieces|
|1.5 tbsp||(22 mL) Cumin|
|1 tbsp||(15 mL) Chopped fresh cilantro|
|2 tsp||(10 mL) Paprika|
|.25 cup||(60 mL) Chopped green onion|
CUT chicken into 8-10 pieces (drumsticks, thighs, wings, breasts). Place in a shallow baking dish or re-sealable plastic freezer bag. Rub chicken with onion, garlic, salt and pepper. Marinate in refrigerator for 2-4 hours or up to overnight.
HEAT 1 tbsp (15 mL) of oil in a large skillet over medium-high heat. Add chicken and onions to the pan and cook for 2-3 minutes per side or until golden brown. Remove the chicken from the pan and set aside. Heat remaining oil in the same pan and add tomatoes and green peppers. Cook for 1-2 minutes. Return the chicken to the pan and add potatoes and carrots. Season with cumin, cilantro, paprika, salt and pepper. Add enough water to almost cover. Bring to a boil then reduce heat to low. Simmer covered for 30 minutes or until chicken and vegetables are tender and the internal temperature of the chicken reaches 185°C (85°F).
GARNISH with green onions and serve with rice or pasta.
