This quick and easy dish is great for a snack or even as a side at dinner!
|2||large Russet potatoes|
|4 tbsp||olive oil|
|1/2 cup||grated old cheddar cheese|
|1/4 cup||sour cream|
Prick with a fork all over the outside of the potatoes.
Microwave for 16 minutes on high, turning halfway.
Cut potatoes in half, and using a spoon scoop out middles, leaving about 1/2cm of potato on the edges and bottom. Discard middles.
Preheat boiler to high.
Slice bologna into 1cmX1cm pieces.
Place potatoes on a cookie sheet, cut side facing up.
Using a basting brush, cover each half of potato with olive oil.
Top each potato half with 2tbsp of grated cheddar and a quarter of the bologna.
Broil for 5 minutes or until potato starts to turn golden.
Serve with a spoon of sour cream.
