This simple side dish is great for a weeknight dinner!
|1 cup||cooked long grain white rice|
|1/2 cup||frozen mixed vegetables|
|1 tbsp||soy sauce|
|2 tbsp||olive oil|
Cook rice according to package directions. Set aside.
In a medium frying pan, heat oil over medium heat.
Add the egg and the rice, slowly combining the two with a spatula as they begin to cook.
Once rice and egg are combined, stir in the vegetables, bologna, and soy sauce.
Continue to fry until cooked throughout, stirring constantly and scrapping the bottom of the pan with the spatula.
