Bologna Egg Salad Sandwich

About this Recipe

A little bit of bologna in your egg salad makes it fun, and tastes great!

Ingredients

4 slices whole wheat bread
3 eggs
2 slices Bologna
1/8 tsp pepper
1/8 tsp salt
1/3 cup light mayonnaise

Directions

In a small pan, boil the eggs for 10 minutes. Remove shells, and refrigerate for 10 more minutes.
Slice bologna into very small pieces (about 1-2mmX1-2mm).
In a large bowl, combine bologna, eggs, mayonnaise, salt, and pepper. Combine with a potato masher until well mixed and smooth.
Divide evenly between two slices of bread. Top each with another slice of bread for two sandwiches.
