The veggies and bologna go nicely together on the BBQ
|1||red onion, cut into large pieces|
|1||green pepper, cut into large chunks|
|1.5 cups||whole white mushrooms|
|1/2 cup||olive oil|
|1/2 cup||lemon juice|
|1 tbsp||maple syrup|
|1 tbsp||dijon mustard|
In a large bowl, combine olive oil, lemon juice, maple syrup, honey, and mustard. Whisk together until smooth. Stir onions, pepper, and mushrooms into marinade until covered. Place bowl in fridge for 1 hour.
After the 1 hr, heat BBQ to medium-high.
Slice the bologna in half.
Alternate veggies and two pieces of bologna per skewer.
BBQ for 15 minutes, turning frequently.
