Warm and comforting Southwestern black bean and sausage chili is sure to heat things up in your kitchen.
|1 tbsp||(15 mL) Olive oil|
|1||Small onion, diced|
|2||Small carrots, diced|
|1||Red pepper, diced|
|1||Stalk celery, diced|
|2||Cloves garlic, minced|
|1||(300g) Maple Leaf® Sausage Meat|
|1 tbsp||(15 mL) Paprika|
|1 tbsp||(15 mL) Cumin|
|3 cups||(750 mL) Chicken broth|
|1||(28 oz/796 mL) Can crushed tomatoes|
|2||(14 oz/398 mL) Cans black beans, drained|
|Salt and pepper|
|1-2 tsp||(5-10 mL) Lime juice|
|Sliced green onions|
HEAT oil in a large saucepan over medium heat. Add onions, carrots, red pepper, celery and garlic. Sauté 3-4 minutes or until soft. Add sausages, paprika and cumin. Cook 3-4 minutes.
ADD broth, tomatoes and beans. Season with salt, pepper and lime juice. Stir to combine. Simmer over low heat for 10-15 minutes, stirring occasionally. Ladle into serving bowls and garnish with green onions.
