Warm and comforting Southwestern black bean and sausage chili is sure to heat things up in your kitchen.


1 tbsp (15 mL) Olive oil
1 Small onion, diced
2 Small carrots, diced
1 Red pepper, diced
1 Stalk celery, diced
2 Cloves garlic, minced
1 (300g) Maple Leaf® Sausage Meat
1 tbsp (15 mL) Paprika
1 tbsp (15 mL) Cumin
3 cups (750 mL) Chicken broth
1 (28 oz/796 mL) Can crushed tomatoes
2 (14 oz/398 mL) Cans black beans, drained
Salt and pepper
1-2 tsp (5-10 mL) Lime juice
Sliced green onions


HEAT oil in a large saucepan over medium heat. Add onions, carrots, red pepper, celery and garlic. Sauté 3-4 minutes or until soft. Add sausages, paprika and cumin. Cook 3-4 minutes.

ADD broth, tomatoes and beans. Season with salt, pepper and lime juice. Stir to combine. Simmer over low heat for 10-15 minutes, stirring occasionally. Ladle into serving bowls and garnish with green onions.
