Big Salad with Chicken, Hearts of Palm, Feta, Maple Balsamic Dressing

About this Recipe

This salad is a quick and healthy lunch. Great for casual weekend eats, after a workout, or even a light supper. The dressing is great to keep in the fridge.

Ingredients

1/3 cup balsamic vinegar
2/3 cup extra virgin olive oil
1 large clove garlic
1 tbsp real maple syrup
freshly ground salt and pepper to taste
6 cups mixed greens (such as arugula, romaine, spinach..)
2 cups Maple Leaf Prime chicken or turkey strips
1 can hearts of palm, cut into 1/4 inch rings
1 red bell pepper, cut into bite-sized pieced
1/2 cup crumbled feta cheese
Maple Balsamic dressing to taste

Directions

For the Best Maple Balsamic Vinaigrette:
Place vinegar to salt & pepper in a Magic Bullet, mini-chopper or blender.
Blend until combined (about 1 minute).

For the salad:

If desired, warm the chicken in the microwave for about a minute. Combine all ingredients up to the dressing in a large bowl. Toss. Add dressing to taste (we don’t like a ton, you might). Toss again.

Notes

This is a great salad you can whip up quickly. The dressing keeps in the fridge for about a week, so make it up in advance. Serve with a toasted bagel, fresh baguette, some crackers, or add croutons for some crunch.
