This salad is a quick and healthy lunch. Great for casual weekend eats, after a workout, or even a light supper. The dressing is great to keep in the fridge.
|1/3 cup||balsamic vinegar|
|2/3 cup||extra virgin olive oil|
|1||large clove garlic|
|1 tbsp||real maple syrup|
|freshly ground salt and pepper to taste|
|6 cups||mixed greens (such as arugula, romaine, spinach..)|
|2 cups||Maple Leaf Prime chicken or turkey strips|
|1||can hearts of palm, cut into 1/4 inch rings|
|1||red bell pepper, cut into bite-sized pieced|
|1/2 cup||crumbled feta cheese|
|Maple Balsamic dressing to taste|
For the Best Maple Balsamic Vinaigrette:
Place vinegar to salt & pepper in a Magic Bullet, mini-chopper or blender.
Blend until combined (about 1 minute).
For the salad:
If desired, warm the chicken in the microwave for about a minute. Combine all ingredients up to the dressing in a large bowl. Toss. Add dressing to taste (we don’t like a ton, you might). Toss again.
This is a great salad you can whip up quickly. The dressing keeps in the fridge for about a week, so make it up in advance. Serve with a toasted bagel, fresh baguette, some crackers, or add croutons for some crunch.
