This recipe is from my Mother in law, & was always marked as "Excellent".

The meatballs can be served by themselves or with noodles & a pasta sauce of your choice.

Place in sealable container & place in kid's lunch.


2 eggs
2/3rd cup milk
2 tsp. salt
1 tsp pepper
3 slices bread - crumbled
1 med. onion - chopped
1/2 cup shredded carrots
1 cup shredded cheddar cheese
1 1/2 lbs. ground beef
1/2 cup brown sugar
1/2 cup ketchu p
1 tbsp. prepared mustard


1. Beat eggs lightly. Add milk, salt pepper & bread. Mix until bread is disintegrated. Add onion, carrot, cheese & beef. Mix well.

2. Combine brown sugar, ketchup, & mustard. Add to beef mixture & mix well again.

3. Create meat balls with hands, or by a scooper for size preferred, (eg. 1 -1 1/2 in. balls). Place on greased cookie sheet.

4. Bake @ 350 degrees Fahrenheit for 1 hour. Allow to cool for 5 mins. Ready to serve.


Smaller meatballs with size under 1" - will require a little less time.
