|1/2 lb||(225 g) Of your choice of pasta|
|1 tbsp||(15 mL) Butter|
|1 tbsp||(15 mL) Olive oil|
|1||Maple Leaf® Country Kitchen® Smoked Ham, diced|
|1||Red or orange pepper, finely diced|
|3||Cloves garlic, thinly sliced|
|2||Bunches green onions, thinly sliced (green parts reserved)|
|1 tbsp||(15 mL) Dry mustard|
|1 tbsp||(15 mL) Cajun seasoning|
|2 tbsp||(30 mL) Flour|
|1 cup||(250 mL) Reduced sodium chicken broth|
|1 1/2 cups||(375 mL) Milk|
|1 cup||(250 mL) Grated Cheddar cheese|
|1 cup||(250 mL) Swiss cheese|
|Salt and pepper|
COOK pasta according to the package directions in a large pot of salted water until al dente. Drain well and set aside.
HEAT butter and olive oil in a large saucepan over medium-high. Add ham and cook, stirring for about 2 minutes. Stir in peppers, garlic, and the white part of the onions, dry mustard and Cajun seasoning. Cook for another 1-2 minutes. Sprinkle with flour and cook for another minute. Whisk in chicken broth and milk. Bring to a boil, reduce heat and simmer for 1-2 minutes or until slightly thickened. Stir in grated cheeses until smooth and melted. Finally add the cooked pasta and stir to coat. Season to taste with salt and pepper. Serve in a large bowl sprinkled with remaining green onions.
