This quick and easy to prepare sandwich is a healthy and fresh tasting lunch option.

Ingredients

8 Slices California Goldminer® Sourdough Jaco, sliced on the bias and lightly toasted
1 cup (250 mL) Sliced pickled beets
.25 cup (60 mL) Crumbled Feta cheese
.5 cup (125 mL) Baby arugula
.25 cup (60 mL) Olive oil
Salt and pepper

Directions

ASSEMBLE sandwich by topping four slices of toasted bread with beets, feta, arugula, salt, pepper and a drizzle of olive oil. Top with the remaining bread slices.
