|8||Slices California Goldminer® Sourdough Jaco, sliced on the bias and lightly toasted|
|1 cup||(250 mL) Sliced pickled beets|
|.25 cup||(60 mL) Crumbled Feta cheese|
|.5 cup||(125 mL) Baby arugula|
|.25 cup||(60 mL) Olive oil|
|Salt and pepper|
ASSEMBLE sandwich by topping four slices of toasted bread with beets, feta, arugula, salt, pepper and a drizzle of olive oil. Top with the remaining bread slices.
