1 cup salsa
1/2 tsp onion powder
1/8 tsp cumin
1/2 tsp chili powder
3 tsp tomato paste
300 g shaved beef
1/3 cup rep peppers, chopped
1/3 cup yellow peppers, chopped
1/3 cup onions, chopped
1 tsp garlic
1 tbsp soy sauce
2 tbsp BBQ sauce
1/2 tsp sesame oil
salt and pepper to taste
6 Dempster's® Tortillas (small)
1 cup shredded cheddar


On medium heat, cook the beef, red and yellow peppers, onions, and garlic for about 10 minutes or until done, add BBQ sauce, sesame oil and soy sauce and cook for another 3 – 5 minutes. Add salt and pepper to taste. Divide the beef mixture into 5 or 6 piles. . In a small personal size blender, add the salsa, onion powder, cumin, chili powder, tomato paste, and blend together. Take each pile of beef and place onto middle of Dempster's® Tortilla. Sprinkle with some cheese, fold ends in, and roll, placing seam side down in a 9x9 baking dish. Repeat until all is used up. Pour sauce over the enchiladas, and sprinkle remaining cheese over top. Bake at 350 for 20 minutes. Enjoy!
