This burrito uses ground beef and rice that are cooked with a lot of spice and heat to give it some zing and then stuffed into a healthy Dempster's Ancient Grains tortilla that is sure to be please your friends at your Cinco de Mayo party.
|4||Dempster's Ancient Grains tortilla|
|1 lb||lean ground beef|
|2 cups||cooked rice|
|1||small carrot, finely diced|
|1/2||yellow bell pepper, finely diced|
|3||cloves of garlic, minced|
|1 tbsp||minced ginger|
|1/2 tsp||cayenne pepper|
|1/2 tsp||chili powder|
Cook ground beef in a skillet, breaking it into pieces until for about 5 minutes on medium high. Drain any excess fat. Add garlic, ginger, and carrots and cook for 4 more minutes. Add in cayenne, chili powder, rice and bell pepper. Combine and cook for another 5 minutes.
Spoon the about a quarter of the mixture onto a tortilla and roll up to make a burrito. Slice into two halves and repeat for the remaining tortillas. Serve with a side of salsa or hot sauce.
