This BBQ Upright Lemon Chicken is the most convenient roast to use the BBQ in the winter as it doesn't need you to constantly stay outside to check on it. Just put it in and every 20 minutes, check and baste, and you get the BBQ flavour in the middle of December!


1 Maple Leaf Prime Chicken
1 lemon, quartered
3 medium onions, quartered
2 yellow carrots, cut into chunks
2 tbsp Herbes de Provence
1 jalapeno pepper, minced
3 tbsp canola oil


Rub chicken with 1 tbsp. oil. Rub jalapeno pepper and Herbes de Provence all over the bird. Place bird upright over the top of Upright roaster or pop can roaster already lined with aluminum foil. Scatter carrots, onions and lemon into the "trough" of roaster. Drizzle remaining 2 tbsp. oil all over the vegetables. Sprinkle the rest of the herbs and mix with spoon to coat. Place on a preheated 350 deg. F BBQ and roast for 45 minutes, checking and basting every 15 - 20 minutes. After 45 minutes, lower temperature to 225 deg. F. for 15 minutes. Use a thermometer in the thigh to check if it reaches 180 deg. F. Cook further until it reaches 180 deg. F. And enjoy BBQ chicken in the winter!
