Flattened chicken cooks up quickly for a delicious weeknight grill. Dry rub the chicken the night before to really boost flavours.
|1||Maple Leaf Prime Naturally® Whole Chicken|
|1 tbsp||(15 mL) Paprika|
|1 tsp||(5 mL) Minced garlic|
|1 tsp||(5 mL) Ground pepper|
|½ tsp||(2 mL) Dried thyme|
|½ tsp||(2 mL) Dried oregano|
|1 tsp||Chipotle chili pepper|
|½ tsp||(2 mL) Salt|
|1 tsp||(5 mL) Chopped fresh rosemary|
REMOVE the backbone from the chicken with sharp kitchen shears. Lay the chicken flat on a cutting board, breast side up, and flatten by pressing down on the breasts.
COMBINE remaining ingredients in a small bowl. Rub all over chicken skin on both sides.
PREHEAT BBQ to medium. Lightly spray grill with non-stick cooking spray. Grill chicken, turning frequently until grill marks form and the skin starts to crisp. If flare ups occur, move the chicken away from the flames to keep from burning. Grill for 10 to 12 minutes on each side or until the internal temperature reaches 185°F (85°C) and the skin is golden brown and crisp. Lay rosemary sprigs on top of the chicken for the last 5-10 minutes of cooking.
