Looking for a guilt free way to satisfy that french fry craving? These get crispy on the outside but moist and fluffy on the inside - you can certainly play around with the herbs and spices to customize them for your crowd. I love adding a little chipotle powder to them - but the kids don't like them spicy so then I just make two different batches!
|6||Large potatoes, washed and cut into wedges|
|1/4 cup||Canola oil|
|1 tsp||onion powder|
|1 tsp||garlic powder|
|1 tsp||Dry Oregano (or the herb of your choice)|
|Salt and Pepper to Taste|
Combine everything in a large mixing bowl and mix well.
Place on the top rack of your BBQ over medium/low heat and cook with the lid closed.
After about and hour they should be nice and tender if poked with a knife.
Tip: once you they are cooked and you are ready to start grilling the rest of your meal at a higher heat, try to move all the potatoes to one side, even if you have to stack them, and crank up the heat as needed on the other side for the rest of your grilling. Just keep an eye on them so they don't get burnt on the bottom.
