I first tried this at a Brazilian restaurant and it seemed so simple I wanted to duplicate it at home. Good news was, it is just that simple.... and so Yummy!
|1||Pineapple, skin removed but core still in place|
|.25 cup||white sugar|
|High Quality Vanilla Ice Cream|
Sprinkle Pineapple evenly with 3/4 of the sugar mixture and allow to sit for about an hour.
Skewer the pineapple on you rotisserie spit and attach forks.
Place on preheated BBQ at medium heat and allow to cook for about 15 minutes.
Sprinkle with remaining sugar and cook additional 10 minutes.
Remove from spit and Place upright on carving board.
Slice from top to bottom, ensuring each guest gets some of the outside slices as well as internal.
Serve warm on top of Vanilla Ice cream.
