One of the best parts of BBQ season is the reduction of dirty pans to wash! This brings the potatoes to the grill and sends the foil to the recycling bin when you are done!


2 L Potatoes - washed and cubed
1 Sweet onion - sliced
2 Red Peppers - Seeded and Sliced
6 Garlic Cloves - whole
12 Mushrooms - quartered
2 tbsp Butter
2 tbsp Canola Oil
Salt and Pepper to taste


Place a large piece of heavy duty foil on the counter ( I usually double layer it)

Place mixture of onions, peppers,garlic and mushrooms in centre of foil.

Place bits of butter through out mixture

Place cubed potatoes on top on mixture, drizzle oil over top and season with salt and pepper.

Wrap package up and seal it tight.

Place on a preheater BBQ over medium low heat.

Cook until potatoes are tender - about 1 hour.

Carefully open a potion of the foil to allow the steam to escape and cook for an addition 20 minutes.
