|2||Dempster’s® Gluten Zero™ Tortillas|
|4 tbsp||(60 mL) Olive oil|
|2 tbsp||(30 mL) Gluten Free BBQ sauce|
|1/2 cup||(125 mL) Grated cheese blend|
|1 1/2 cups||(375 mL) Chopped, cooked chicken|
|6||Slices bacon, cooked and chopped|
|2||Thinly sliced green onions|
|2 tbsp||(30 mL) Grated Asiago or Parmesan cheese|
PREHEAT BBQ to medium. Lightly coat the grill with non-stick cooking spray. Brush both sides of each tortilla with olive oil and place on the grill for 2-3 minutes per side or until slightly crisp. Turn one side of the BBQ off and place the tortillas on indirect heat. Spread a thin layer of BBQ sauce over each tortilla followed by cheese blend, chicken, bacon and green onions. Sprinkle with Asiago or Parmesan cheese. Cook with the lid closed for about 5 minutes or until the tortillas are crisp and the cheese is bubbly.
OVEN METHOD: Preheat oven to 375°F (190°C). Place on a baking sheet and bake for about 5 minutes or until almost crisp. Spread a thin layer of BBQ sauce followed by cheese blend, chicken, bacon, green onion and Asiago and Parmesan cheese. Bake until cheese is bubbly.
For an adult option, try topping each tortilla with Marinara sauce, grated Mozzarella and peach slices. Add slices of prosciutto and a handful of arugula. Drizzle with olive oil and serve.
