Simple, just a touch of mango and red pepper with cilantro make it as pretty as it is delicious.
|1 tbsp||(15 mL) Butter|
|3 tbsp||(45 mL) Minced onion|
|1/4 cup||(60 mL) Diced red pepper|
|2 cups||(500 mL) Cooked rice or 1 (250 g) package Prepared Express Basmati Rice|
|1/2||Mango, finely diced|
|2 tbsp||(30 mL) Cilantro, finely chopped|
|Salt and pepper|
HEAT butter in a small skillet over medium. Add onions, garlic and red pepper. Sauté until soft and fragrant. Add rice and heat through, about 2 minutes. Stir in mango and cilantro. Season with salt and pepper and serve.
