I used what I had in the fridge one day and came up with this delicious meal that could almost be a desert!
1 | butternut squash |
1 | banana |
1 cup | of light or heavy cream |
Peel and cube 1 butternut squash and start to simmer in 1 cup of cream.
After simmering for 30 minutes peel, chop and add in banana
Once squash is tender, transfer to a blender in batches to puree until smooth. Alternatively you can use a hand blender if you want it a little chunkier!
