This delicious recipe has been handed down to me. It is the perfect meal for your Spring Brunch. Ham, eggs, veggies, with lots of melted cheese, all of your brunch favorites, all in one dish. It is actually very easy to make for such a great end result. Your home will smell magnificent while baking this special meal!


1 small potato
1 tbsp chopped parsley
1 pinch salt
1 pinch ground black pepper
1 tbsp olive oil
1 tbsp butter
.3 cup yellow onion- minced
.3 cup red pepper-chopped
3 mushrooms-sliced
1 tbsp green onions chopped
4 grape tomatoes chopped
1.5 cups Maple Leaf Deli Ham chopped into 1/2 inch cubes
.5 cup cheddar cheese-aged-grated
1 tbsp Parmesan cheese-grated
4 eggs


Boil small potato in salt water until cooked until tender but firm. Cool, peel and chop. It is important that the potato is cold or it will break into pieces when chopped. In a medium bowl add eggs, parsley, salt and pepper, whisk until combined, set aside. Preheat oven to 350 degrees F. In a medium cast iron skillet heat on stove top to medium. Add oil and butter. Once butter is melted add minced yellow onion and chopped red pepper, cook until soft. Add mushrooms and cook another 1 minute while stirring. Add diced ham,chopped potato, chopped tomato and green onions. Stir for another minute. Pour egg mixture evenly all over, making sure you cover everything. Sprinkle cheeses all over. Place in oven for 10-15 minutes until golden, cheeses have melted and the centre is set. (just jiggle gently) Once baked through, let rest 10 minutes before you slice it. Serve with Dempster's bread or toast. Enjoy!
