The classic taste of ham & cheese wrapped up into a yummy burrito, perfect for a quick and filling school night dinner.
|6||Dempster’s® Original Large Tortillas|
|1 can||(398 mL/14 oz) refried beans|
|3 cups||(750 mL) Diced Maple Leaf® Country Kitchen® Smoked Ham|
|1||Green or red pepper, diced|
|2||Small tomatoes, diced|
|1 ½ cups||(375 mL) Spanish rice, cooked|
|1 ½ cups||(375 mL) Grated Tex-Mex cheese|
|1/4||(60 mL) Olive oil|
PREHEAT oven to 375°F (190°C).
SPREAD each tortilla with ¼ cup (60 mL) of the refried beans. Mix together ham, peppers, tomato, rice and cheese in a medium bowl. Divide the mixture between each tortilla. Roll tightly, folding the edges to seal as you roll. Place seam side down on a baking sheet. Brush each with olive oil. Bake in a preheated oven for 10-15 minutes or until crisp on the outside and the inside is hot and melted.
SERVE with salsa and sour cream on the side.
Can be frozen and reheated.
