This simple chicken dish bakes up moist and juicy atop a sweet and savoury mixture of apples and pecans. With a hint of maple, the apple mixture is the perfect addition to tender roast chicken.
|1 tbsp||(15 mL) Olive oil|
|4||Maple Leaf Prime® Naturally Boneless Skinless Chicken Breasts|
|Salt and pepper|
|2||Large apples, sliced|
|.25 cup||(60 mL) Pure maple syrup|
|1||Clove garlic, minced|
|.5 cup||(125 mL) Coarsely chopped pecans|
|2 tbsp||(30 mL) Chopped fresh thyme|
PREHEAT oven to 350°F (180°C).
HEAT oil in an oven proof skillet over medium- high heat. Season chicken with salt and pepper. Sauté chicken 3 minutes per side or until golden brown. Remove from skillet and set aside.
ARRANGE apple slices in skillet. Combine maple syrup, garlic and pecans in a small bowl. Spoon half of pecan mixture over sliced apples. Place browned chicken on top and spoon remaining pecan mixture on top of chicken. Sprinkle with thyme.
COVER skillet with aluminum foil and bake in pre heated oven for 30-35 minutes or until internal temperature of chicken has reached 165°F (74°C) and apples are tender.
