6 Maple Leaf Pre-cooked Original sausages
3 tbsp flour
1/2 cup milk
1 cup black beans
2 Roma tomatoes
3 tbsp chopped cilantro
1/2 cup feta cheese
salt and pepper
olive oil


Pre-heat oven to 375%

Chop sausages and heat through. Set aside.

In mixing bowl, beat six eggs. In a separate bowl, whisk three tbsps of flour into half a cup of milk. Once well blended and lump free, add mixture to eggs along with beans, chopped tomatoes, sausage, cilantro, feta, and salt and pepper. Gently stir ingredients together.

Once oven is preheated, pour mixture into 8 inch round pan that has been rubbed with olive oil on all sides.

Bake on middle rack for 30-40 mins until cooked through in the middle.

Remove from oven and set aside for 5 minutes. Cut, and serve with a salad. Also good with fresh salsa and avocado.
