Every time I serve this to friends, they ask for the recipe. This surprises me since it is so simple and basic (and the best way to serve squash in my opinion).
|fresh ground pepper|
Cut squash in half lengthwise. Scoop out all the seeds, and scrape out stringy innards. Place open side up on a baking dish. Spread 1/2 of the butter into each. Crack fresh ground pepper over them.
Bake in 350F oven until tender (test with a fork to make sure it is soft), and lightly browned on top edge. Depending on the size of your squash it will take 1-1.5 hours.
You can scoop the squash out of the skin and mash with butter to serve, or if you would like a more rustic harvest look, you can serve it right in the skin as shown.
