1 Package (4 pieces) Maple Leaf Prime Naturally® Chicken Thighs
2 Small red onions, peeled and quartered at the root
2 Sprigs thyme
1/4 cup (60 mL) Honey Dijon salad dressing
1/4 cup (60 mL) Orange juice
2 tbsp (30 mL) Dry sherry
2 Cloves garlic, minced
Salt and pepper


PREHEAT oven to 375°F (190°C).

ARRANGE chicken and red onions in a rectangular baking dish. Place sprigs of thyme over top. Whisk together all of the remaining ingredients and pour over the chicken and onion. Season with salt and pepper to taste.

ROAST in preheated oven for 35-40 minutes or until the chicken skin is crispy and golden and the internal temperature has reached 185°F (85°C).
