Tiramisu with caramelized bacon and chocolate.


8 Strips of Maple Leaf Bacon
8 tbsp Brown Sugar
4 Eggs, divided
¼ cups White Sugar
1 lb Mascarpone Cheese
2 cups Espresso
¼ cup Amaretto Liquor, optional
300 g Lady Fingers
¼ cup Cocoa Powder
3 tbsp 70% Dark Chocolate, grated


PREHEAT oven to 400F and coat the bacon strips with brown sugar on a lined backing sheet

WHISK together the egg yolks and sugar, into a creamy texture. Add the mascarpone cheese and mix

WHIP your egg whites with an electric beater. Fold the whites into the mascarpone mixture to make it light and fluffy

DUNK the lady fingers once in your espresso, that has been mixed with the Amaretto

LAYER the caramelized bacon on top of the lady fingers. Then, layer on the mascarpone mix evenly on top. Repeat this entire step once more, on top of the first layer set. Let this sit overnight in the fridge

SPRINKLE some cocoa powder evenly on top. Then add some shaved dark chocolate

CUT into pieces and serve
